what's for dinner










In an effort to stave off my cold-weather pasta cravings (now that the snow outside is blowing sideways -- so much for sunny and 55!), I am trying to meal plan a little bit while TJ is gone.  It is challenging to come up with meals for one, since I am not a leftovers-lover. I made this recipe last Thursday and ate the leftovers for three days after.  Monotonous? A little, but oh so delicious.  Totally a recipe that could be doctored up a bit as well for all the vegetable lovers out there.  So easy too!

I have a recipe for white chicken chili that you can make it the crock pot (super easy and yummy). It would make a bunch that you could freeze in portions and eat as you feel like it.

I know how it feels cooking for one. Jake and I didn't officially live in the same place until we had been married for two years. I have some other recipes that are easy to make and freeze in portions--that way you feel like you're mixing it up a little. I'm not a huge fan of left overs either when I'm the only one eating them.
